I went through [[and am still sort of working through]] life with a man who has a specialized diet. My husband is just SUPER picky. [[as in, when we met, he was only eating meat, cheese, & bread.]] He now eats most leafy greens, apples, and things with sauce! [[for example, pasta, stir fry, etc.]] Tiny victories! haha Coming from a background of eating EVERYTHING, it was really difficult for me to understand and adjust what I cook to accommodate his needs, but we're both growing and that's all I can ask. =]

ReplyDeleteI totally understand cooking for picky/special needs eaters- my sister and boyfriend both are super picky and last year I had two roommates- I couldn't have any processed sugar and the other was gluten-free. So making group meals was challenging!

haha! oh, margaret. you make me happy because i don't know either! that's probably why it's so hard for me to figure out how to cook low-cholesterol!
DeleteHey Courtney! So good to see your face again! My husband has high blood pressure which is what pushed me to cooking with only fresh ingredients (no cans, I have to check the chicken for added sodium, stuff like that). It was a challenge at first, that's for sure!

DeleteHey Courtney! I found you via this vlog link-up! I can totally relate to your frustrations trying to cook healthy meals for your husband that he will eat. My husband is the same! I watched this incredible documentary recently called Forks Over Knives and it changed my life, I definitely recommend it! It's on Netflix if you have that. I've been doing some research for school related to high cholesterol and diet and have found that by nature, only animal products contain cholesterol, plant products do not. How about trying plant-based alternative to the meat in those southern comfort food dishes? :/ Bean burgers instead of a hamburger, for instance? It would be hands-down the most effective way to lower his cholesterol. If your husband is like mine, he'll probably not be too thrilled about that change, but with time, he's come around. We don't cook meat anymore in the house. He's totally given up red meat and only eats chicken or turkey when he's eating out. Anyways, good luck!!! :)

I love that you work somewhere that just blasts jazz music- that would be such a soothing work environment, hahaha! So first and foremost, thank you for sharing that soup recipe! I have been on the hunt for good soups and so many of the ones I am finding have canned this or canned that and we are trying desperately to do away with that! I can't wait to try this one though! I think it's going on our meal plan for next week, or the following!
